How long in the business: Since 2006
First drink/drunk: I was at a house that a bunch of metal heads lived in in my hometown of Cobourg. I drank four airplane sized bottles of Peppermint Schnapps that I had stolen from my mom. I was 13. I drank that and watched some SLAYER (always spelled with all caps) live video. Then I tried to skateboard home. Oops. Punk Rock kid, grows up to be on the radio, then moves on to touring with bands. Goes so broke that he is forced to take a job as a barback at The Drake Hotel. Falls (even more) in love with booze.
What influences me: At Campagnolo, Chef Craig Harding has done a great job of using what’s in season and readily available to put spins on stuff his Nonna used to make. I try to do the same thing with the bar menu, using what’s in season and twisting classic drinks. As for non-work drink inspiration, I am always reading blogs and walking around liquor stores and picking other bartender’s brains.
Best barfly: I was once called a bucket for cutting someone off. A bucket of what? And wouldn’t a bucket give you more of something? You store things in them, right?
Cinematic bartender: Guinan on Star Trek The Next Generation. She is not only amazing at creating drinks and has researched many cultures in order to accomodate everyone on a galaxy class starship but more importantly, she gives the best advice. She is very wise, of course she’s also about 800 years old, so she has some experience I guess.
Rules: Ladies first, no hats and no olive brine in a Hendrick’s martini. Also, you can call me anything but “Chief”.
Celebrity experiences: I think Sigourney Weaver hit on me once. I panicked. Because that’s Dana Barrett.
Best late-night or morning-after places: I have been going to the New Ho King for food since before I could legally drink. I never get tired of Hunan Tofu on rice. Lately I have been spending alot of time at Yours Truly as well. They are very friendly people that take good care of vegan nerds like me. Being vegan makes brunch a tough one for me. I typically will make myself something before going out for morning/early afternoon drinks.
